The Israeli company InnovoPro recently presented to the public its “CP Foam 1001“, the perfect substitute for egg white.
A product designed for vegans and for those who do not have the opportunity to eat eggs, suitable for sweet and savory preparations.
CP-Foam 1001 is obtained from CP-Pro 70 chickpea protein – hence the name chosen – and has an incredibly similar flavour. The objective of company, is being able to produce something innovative and functional, which is easy to use and economical.

The novelty of chickpea egg white
InnovoPro chickpea egg white has the same characteristics as animal egg white. Once whipped, it appears shiny and white, exactly like eggs.
Bakers and pastry chefs can use it for the production of mousses, meringues and much more, without having to resort to expensive and difficult to recover products. It is sold in powder, so as to easily adapt to different preparations.
The CEO of the company, Taly Nechushtan, talked about the innovation of CP-Foam 1001, showing all its positive sides. Here are some of his words:
“We know that bakers and pastry chefs are early risers. They arrive at the factories very early in the morning. So, any additional process that makes their lives harder or the hours longer, they don't like.
So, this is why we wanted to offer such a simple solution that really shortens the preparation time for them. "
Pastry chefs will be able to use CP-Foam 1001 chickpea egg white as they would egg white. To whip it up, they will only have to combine it with sugar and water; nothing could be simpler and more immediate.
Taly also provided information on the price, revealing that it is very similar to standard egg whites. The product has also been reported to have superior nutrition to other substitutes, thanks to the proprietary protein base.
New projects for vegan menus
InnovoPro focused on producing a substitute for egg white. Other companies, however, are dedicated to researching products capable of replacing the whole egg (and not just part).

In November, the Swiss company Migros has announced the launch of its vegan hard-boiled eggs.
The amount of vegan products is increasing considerably, and it is likely that we will soon be able to see a complete substitute for various foods on the market.
